Mahlep (mahaleb or mahlepi) 10g

In the countries of the Near East where there are Christian traditions of the Orthodox rite (Lebanon, Syria, Armenia, Greece and Turkey), this spice in the form of powder is used in the recipe for Easter buns, the "tsourékia", which generally behave a painted egg in the middle.

In the United States, it is a spice used for Greek-American holiday cakes and baking recipes.

Its taste is reminiscent of a mixture of bitter almonds, cherries and orange blossom, and it is most often used in brioches, bread, cheese, creams, cakes and biscuits.
