Lemon balm owes its name to its ability to attract bees, in antiquity it was also dedicated to the goddess Artemis.
Traditional properties:
Over 2000 years ago it was used as a medicinal herb, as evidenced by Dioscorides and Theophrastus, as well as the Roman Pliny. In the Middle Ages, it was believed to be a lucky charm for love, an elixir of longevity and that it could act against headaches.
Cooking tip:
Lemon balm has a mild, lemony taste and can be used to accompany soups, fish, mushrooms, lemon sauces, poultry or meat, especially as a marinade.
You can also make various hot or cold infusions that combine wonderfully with Greek mountain tea or mint (I personally add my spoonful of organic honey).
