These are the eggs of the gray mullet of superior quality, cooked just with fleur de sel from Messologhi according to a secret family recipe. This makes it a unique product in the world, without preservatives, with a distinct but delicate taste, a velvety texture and a long aftertaste.
Its color varies from golden yellow to golden red.

Place a thin slice of bottarga on toast with a few drops of lemon juice, olive oil and pepper. The eggs in the bottarga do not need to be cooked. Usually served as a starter accompanied by dry white wine, champagne, whiskey or ouzo. Before cutting the wax from the eggs, leave them at room temperature for about half an hour so that they come off easily.
