White wine Roditis Alepou Domaine Tatsis 75cl

Pericles and Stergios Tatsis produce an exceptional dry Roditis in Macedonia, Greece, carefully crafted in their biodynamic vineyards in Goumenissa. This wine highlights the authentic energy of the Roditis grape, offering a pure and complex expression.

Grown at 250 meters above sea level on clay and loamy soils, this Roditis Alepou (Fox) reveals mineral notes reminiscent of chalk, reinforced by prolonged contact with the lees. This method brings depth and complexity, while maintaining a "raw" approach that avoids extremes, especially the wild side that can sometimes be found in their orange Roditis.

The vinification is meticulous: after careful destemming, the grapes undergo a 24-hour pre-fermentation extraction at low temperature (8-10°C), followed by slow fermentation with indigenous yeasts. The wine then rests on its lees for around six months, before being bottled without filtration or the addition of sulphites. An additional 12 months in vats with the fine lees further enriches this wine, creating a truly audacious taste experience.

The Roditis des Tatsis is thus a beautiful illustration of the synergy between the biodynamic tradition and respectful winemaking, offering a wine that is both pure and complex, which will appeal to enthusiasts in search of authenticity.
