White wine Thalassitis 2021 Asyrtiko from Santorini 75cl

Thalassitis, with the modern character of a dry wine with an international profile, is a wine with a great history, perfectly combining the typicity and authenticity of the Assyrtiko of Santorini, which has become the "flag" of Greek wine in abroad and which highlights the gastronomic richness of our country.

"Thalassitis" is produced from Assyrtiko, the traditional white grape variety of Santorini. It is perhaps the only variety in the Mediterranean area that manages in these climatic conditions to combine satisfactory ripeness of the grapes with a relatively high acidity, a characteristic particularly important for the taste balance of dry white wines.
The Assyrtiko chosen for the "Thalassiti" comes exclusively from the indigenous vineyards of Episkopi, Akrotiri and Pyrgos. The average age of these vineyards is estimated between 70 and 80 years.
The very low yield per hectare, which rarely exceeds 350 kg (26 hl/ha), combined with the soil and the grape variety, gives an exuberant, nervous wine with a strong personality.
"Thalassitis" is eaten during a meal, especially with seafood, fish and shellfish, but also with lamb with lemon. Generally with flavors of medium aromatic intensity where salty, sour or oily flavors predominate.
A particularity of most Assyrtiko from Santorini is that, although they are white wines, they have the "attitude" of reds! Try to age your "Thalassitis" for 2-3 years, but strictly at a temperature that will never exceed 12-14°C. Thalassitis will change. Its metallic dimension will fade as aromas of fruit and honey coat its body.
Finally, don't forget to put your "Thalassitis" (new or aged) in a large carafe about half an hour before enjoying it.
